I love cheese. It’s nice and firm and a little more mild flavor-wise coming out of the fridge but once it hits room temperature it gets softer and too squishy and tastes sharper and sometimes if it’s out too long it sweats and the edges get hard. No no. Fridge cheese is a safe food warm cheese is an unsafe food.

Melted cheese is obviously top tier. No texture issues there, but anything in between cold and hot enough to melt is a big no.

Brie is the only exception to this rule, because it’s actually better at room temperature imo, since the texture doesn’t change as much and the flavor comes out more. But the rind is easiest to remove fresh out of the refrigerator. And i don’t care how many people say the rind is edible—the rind is inedible (to me). Baked brie is top tier but difficult to deal with the rind once the inside gets goopy.
