This has happened before oneui v6.0 but it’s getting annoying at this point, almost every day it happens at least once where for a while I just don’t get notifications at all and I can’t fix it

Yeah, happened after oneUI 6.0 for me.
I get the notifications on my tab S9, but I don’t get them on my watch or my phone, as the phone just doesn’t receive them. So I get important messages like 10-20min later on the phone than on the tablet, annoying af.
Yep. i have a s23 ultra and i dont receive any notification but later i check on my WhatsApp and i have messages for like 20 minutes ago
