Jazz musicians in New York City finishing their gigs in the late night hours between dinner and breakfast would go to Wells Supper Club in Harlem and get a little bit of both.

That makes sense, breakfast food + breakfast food = breakfast.
Chicken + Waffles = ?
Breakfast. Or dinner. I don’t see the problem here.
When you think about it dinner is really breakfast for the late shift.
