I have upgraded my Note 10+ to the S23 Ultra and I would like to know what the Smart Switch transfers exactly. Will it transfer everything from my old device (like apps, settings, in-app data, secure folder files, paired Bluetooth devices, side-loaded apps, logins, etc)? Is there stuff that won’t transfer?

It transferred everything for me but I think I had to log in to a few apps.
I think the secure folder doesn’t transfer directly? I could be wrong

Yes it absolutely transfers everything. Connect both phone via usb type c to each other. Open smart switch on both phones and follow the instructions. It will give you all list of everything you want to transfer or not.

everything except work profile. That one has to be signed in and configured again, if the IT admin uses InTune MDM.
Yep it transfers everything over including APK files but you might have to log into some accounts again
You need to log in everywhere again, just saying.
It does not transfer chats from wechat and whatsapp. For wechat, you need to transfer the chats manually, and for whatsapp you need to backup your chats to Google drive.
